Palisa and her husband Matt have expanded her mother Amonrat Chanta’s first business, Chat Thai, founded in 1989, to include multiple venues in Sydney’s CBD and suburbs. They also supply the restaurants with certified organic produce from their Byronshire farm. Being raised in restaurants gave her a love of hospitality, a passion for food and ingredients, and an easy relationship with people from all backgrounds.
After studying Political Science and Liberal Arts at the University of Sydney, she traveled and worked in Hong Kong, London, New York, and Tokyo for 10 years before returning to Sydney to join the family firm, cheering her mother, Amy.
As director, she oversees operations, creates menus for each venue, and selects heirloom open-pollinated herbs, fruits, and vegetables for her organically certified farm, Boon Luck Farm Organics, to serve at her own restaurants and other leading Australian restaurants. Her focus is on organic farming, land regeneration, and wilding the NSW Northern Rivers’ Australian terrain to counteract and gain from conventional agriculture’s harmful techniques.
She released her first book, On Growing, in 2020, hosts, produces, and writes for SBS Food’s ‘Water, Heart, Food’ and will guest host ABC’s Gardening Australia in 2021. Palisa writes frequently about vegetables for The Guardian’s lifestyle section.
